3 Ingredient Banana, Walnut* Pancakes

If you like pancakes, but want a healthy alternative, look no further.

I think they have the flavor of bananas, but my husband says he doesn't taste bananas at all. Either way, they are the preferred pancakes for us.


INGREDIENTS:

  • 1 banana

  • 1 egg

  • 2 T chickpea (aka garbanzo bean) flour

  • Optional: ⅛ cup of chopped walnuts*

  • Approx 1 tsp of cinnamon, dash of Himalayan salt, pinch of cloves*, pinch of cardamom*

  • *optional

INSTRUCTIONS:

  • Mash banana, add egg and flour and cinnamon and optional ingredients if you choose, and mix.

  • Spray skillet lightly with non-stick spray

  • Heat skillet and cook like you would any other pancake.

I serve it with a small amount of real butter and organic date or maple syrup.


Makes 4 small, 3 med or two large pancakes.
