If you like pancakes, but want a healthy alternative, look no further.
I think they have the flavor of bananas, but my husband says he doesn't taste bananas at all. Either way, they are the preferred pancakes for us.
2 T chickpea (aka garbanzo bean) flour
Optional: ⅛ cup of chopped walnuts*
Approx 1 tsp of cinnamon, dash of Himalayan salt, pinch of cloves*, pinch of cardamom*
Mash banana, add egg and flour and cinnamon and optional ingredients if you choose, and mix.
Spray skillet lightly with non-stick spray
Heat skillet and cook like you would any other pancake.
I serve it with a small amount of real butter and organic date or maple syrup.
Makes 4 small, 3 med or two large pancakes.
