I've been experimenting again on finding a recipe that worked for chocolate chip cookies that are grain free and sugar free. I couldn't find one, so created one. After a couple of not-so-great attempts, this one is THE ONE FOR US!
¾ c almond flour
¼ c coconut flour
½ c erythritol
Pinch of salt
½ t baking soda
¼ t baking powder
2 lg eggs
¼ c melted coconut oil
1 T pure vanilla
3/4 c cacao/chocolate chips/chunks*
*the chips have some sugar in them
I baked on a baking stone (could use parchment paper lined cookie sheet) at 350° 20 mins.
This recipe made 14-16 cookies about Tb size, rolled in balls and pressed. They did continue to spread on their own.
