Fast Food Lunch Anyone?

People ask me all the time, "Do you ever eat fast food?". My answer is simply, "Yes, every day!"
99% of what I cook takes an average of 30 mins from chopping to eating. Only when I make something that has to go in the oven (which is rarely) does it take longer. Most everything I make is stove top. Why? The faster foods cook, the more nutrients are retained in the foods.
Today's lunch was about as fast as you can get. This took me less than 15 minutes to make. I'll post what I made and used so you can see why it was so fast.
Let me insert here that I keep my pantry and fridge stocked with things constantly that I can pull out and use for ingredients. We (my sweet, precious hubby) goes to the grocery store once a week with my list and we replace things that need replacing. I am NOT one who has an idea for dinner and runs to the store to get the ingredients. Every. Day. NOPE! I avoid that by thinking ahead and keeping stock.
Now onto today's fast food lunch. I'll call it, A Bean Chalupa.
I started with a Siete Almond Flour Tortilla.
I put 1/4 cup of canned Rosarita's Organic Refried Beans (this brand has minimal ingredients and most all are Debbi Approved. Only one ingredient is not my fave, but it's the last on the list so means there's very little in it.
I sprinkled on top of the beens about 15 grams of organic Shredded Mozzarella Cheese (I buy Simple Truth Organic brand from Kroger)
I sprayed a little Avocado Oil non-stick spray in my skillet, put the tortilla in, covered and let it cook on medium while I prepped the other things.
While the tortilla was getting a little crispy, the beans were heating up and the cheese melting, I cut up some fresh tomato, spinach and 1/8 of an avocado.
When all was crisp, warm and melted, I put the torilla on my plate and sprinkled the spinach, tomato, avocado.
Then topped with a tsp of sour cream, and 2 T of Simple Truth Organic Mild Salsa
It was fast, tasty and hit the spot!
