So here is what you do when
...it's the day before your grocery shopping day
...you've been eating more veggies than normal so you are about out of everything
...you don't really have enough ingredients to make a yummy salad
...it's lunch time and your're hungry.
A smoothie to the rescue!
I had just enough power greens left for a salad, a ¼ of an avocado, some carrots, a package of frozen berry mix, a few frozen peaches and water to make this colorful lunch.
Still nutrient loaded!
Oh and I cooked up a little buckwheat to go with it.
