We made a meal out of this and it was satisfying, but of course it can be used as a side dish.
4 cups broccoli
2 cups carrots
1/4 cup of onions
1/4 cup dried cranberries
Salt, pepper, garlic powder, turmeric
3 tablespoons avocado mayonnaise
1 teaspoon mustard seed powder
2 tablespoon apple cider vinegar, balsamic vinegar or your favorite flavored balsamic. My current favorite is Honey & Ginger White Balsamic.
1 tablespoon lemon juice
¼ cup water
Whisk together and let sit.
Process the broccoli and carrots (I used my Vitamix).
Mix vegetables together and add onions, cranberries and seasonings.
Stir the Dressing ingredients together and stir into salad.
Put in fridge to chill for at least an hour to absorb the dressing.
