Broccoli Carrot Salad
We made a meal out of this and it was satisfying, but of course it can be used as a side dish.
SALAD INGREDIENTS:
4 cups broccoli
2 cups carrots
1/4 cup of onions
1/4 cup dried cranberries
Salt, pepper, garlic powder, turmeric

DRESSING INGREDIENTS:
4 tablespoons avocado mayonnaise
2 teaspoon mustard
2 tablespoon erythritol
2 tablespoon apple cider vinegar
2 teaspoon lemon juice
¼ cup water

INSTRUCTIONS:
Process the broccoli and carrots (I used my Vitamix).
Mix vegetables together and add onions, cranberries and seasonings.
Stir the Dressing ingredients together and stir into salad.
Put in fridge to chill.
ENJOY!
