Easy Peasy Oatmeal Squares

After being inspired and trying out a couple of recipes from The Big Man's World amazingness, I combined a few and created this...


Easy, delicious, quick, and only a handful of ingredients make them the best!

I originally wanted them for a healthy dessert without a lot of sweet and have soon discovered they are great anytime. They make a wonderful breakfast bar, snack or dessert (warmed and with a little whipped cream on top).

Take your pick and enjoy!


INGREDIENTS:

(Notice, I prefer organic as much as possible, but to each his own.)

  • 2 cups of mashed bananas, very ripe (apprx 3-4 Large, 4-5 med)

  • 1 cup creamy organic peanut butter (although you could probably use your fave nut butter)

  • 4 cups of organic ROLLED oats (not quick, not steel cut, but rolled)

  • ¼ cup of organic pure maple syrup

  • ½ cup raisins

  • ½ cup dried cranberries

    • can double raisins or double cranberries instead of splitting if desired.

  • 1 Tb ground ceylon cinnamon

  • Optional: ½ cup organic cacao/chocolate chunks/chips


INSTRUCTIONS:
  • Preheat oven to 350º

  • Prepare 9x13 baking dish with parchment paper and lightly spray

  • Mash bananas and put in large mixing bowl

  • Add peanut butter, maple syrup and cinnamon. Stir well.

  • Add rolled oats and mix together making sure to completely mix in all oats

  • Add the raisins (optional choco) and mix until evenly distributed

  • The batter will be very thick. Add to the prepared dish and use the back of a spoon to spread evenly.

  • Bake for 20 mintues. Check to make sure top is lightly golden. If not, add another 5 minutes being careful not to overbake.

  • Remove from oven and let cool completely. About an hour.

  • Remove from pan using parchment paper to lift and cut into squares or bars. I've found that a large pizza slicer works great.
