I throw chili together all the time and it's always different. This time I realized it was my favorite and wanted to make note of it here for you (really, for me.)
CHILI
INGREDIENTS
1 lb Ground Turkey (or beef)
¼ C chopped onions
¼ C chopped sweet bell peppers
1 can diced tomatoes
1 can tomato paste
1 can tomato sauce
1 can black beans, rinsed and drained
Seasonings: Himalayan salt, black ground pepper, garlic powder, no salt multi seasoning, turmeric, cumin, chili powder, paprika- all to taste, but be generous.
Sour Cream for topping
INSTRUCTIONS
Brown ground meat
Add all other ingredients except sour cream
Stir, cover and simmer until all veggies are tender
Serve with a dollop of sour cream, stir together
"CORN"BREAD

INGREDIENTS
1 cups Part Skim Mozzarella Cheese, shredded (cheddar, Monterey Jack or pepper Jack)
2 ounces cream cheese (softened in microwave)
3 large eggs
1 tbsp baking powder
1/4 tsp Amoretti Sweet Corn Extract (Don't skimp on this. This brand made all the difference in the recipe for me. It's pricey, but worth it and lasts a really long time.)
2 cups almond flour
INSTRUCTIONS
Preheat oven to 350 degrees F. Liberally butter or oil a 10-inch cast iron skillet.
Place the cheeses, eggs, baking powder, extract and almond flour (in that order) in a VitaMix or food processor. Process until a thick batter forms.
Spread batter in skillet and bake for 25-30 minutes until light golden, cautious to not overcook it.
