A dear and precious friend (and one of my very first Ready & WILLING! Wellness Warriors), shared a photo of a salad she had purchased pre-made from a chain health food grocer. It looked so good, there was only one issue...it included preservatives in the list of ingredients.
So of course I decided to make an attempt at recreating it. Although I haven't tasted the original to compare, what I can say is, THIS IS SO GOOD and will become a regular at my home.
Brussels Sprouts Salad
2 Cups of grated/chopped Brussels sprouts*
1 T of finely chopped onions*
¼ Cup roasted pecans (roast raw nuts in oven or stove top with a little avocado oil and salt, garlic powder, chili powder, Worcestershire Sauce, etc.)
¼ Cup dried cranberries*
1 tsp ground flax seed (optional)
1 oz grated fresh parmesan cheese (not canned)
add seasonings: salt, pepper, pinch of garlic powder, pinch of turmeric
Mix all together and stir in dressing below
1 T ground mustard seed
1 T plus 1 tsp water
1 tsp apple cider vinegar
1 T avocado mayo
1 tsp erythritol
Whisk together and mix into salad.
Put in the fridge to chill and marinate.
