Open Faced Meatless Mound of Goodness

If you've not seen the recipe for my No-Corn Bread recipe, you MUST try it.

I used it for making my bread to use for this mound of goodness. It really is delicious.


I will begin by saying that I do not care for mushrooms. Or at least I used to not care for them. Now they have become a regular in our household as a meat substitute since going Primarily Plant in our eating.


As usual, I experimented and discovered this delight that I will make again and again.


(In case you haven't figured out, this REAL FOODS BLOG is really a way for me to keep track of creations or recipes that I experiment with and want to have easy access to later. It's selfishly for me, however I generously share it with you.)


OPEN-FACED MEATLESS MOUND OF GOODNESS recipe:



FILLING:

  • 3 large Baby Bella Mushrooms, chopped

  • ¼ cup of chopped onion

  • ½ cup of chopped orange Bell Peppers (any color will do, but orange, yellow and red have more flavor and more nutritional value than green)

  • my favorite spices: Himalayan salt, black pepper, garlic powder, turmeric, cumin, chili powder, etc.

  • ¼ cup of water

Put all ingredients in a skillet on medium heat and cook until tender.



CREATING the MOUND:


Put the bread on a plate and layer with:

  • shredded lettuce

  • meatless filling

  • sliced tomatoes

  • dollop of guacamole

DIG IN AND ENJOY!
