Quick & Easy (and Tasty) Fajitas

It's been a while since I've shared here, but I have saved several recipes and hope to get them posted soon.
For now, this is one of my all-time favorite quick and tasty dishes. (It really is very good despite the image. I forgot to snap a shot until I was putting away the leftovers. Hopefully, I will update it next time.)
I love Mexican food! And even when going out to eat, I've found a way to stay on my personal plan and enjoy fajitas. It's simply by ordering them with no rice, swapping charro beans instead of refried (or none), and no tortillas. I also often ask for additional bell peppers and onions and have yet to be told no. I do add guacamole and usually a small amount of sour cream and sometimes grated cheese (if it's white cheese - have you ever seen a cow produce orange milk? Hmm, something to ponder.)
When I started making them at home, I knew they were made to my preference—without MSG or other preservatives or toxic additions. And it's super easy and super fast.
Fajitas
INGREDIENTS:
Organic, skinless, boneless chicken breasts (quantity is based on your desire) I shop at Kroger and opt for their Simple Truth Organic on almost everything I purchase.
Red, yellow, orange bell peppers sliced (again desire for quantity)
Purple onions sliced (again...you know.)
Favorite Seasonings - I use Himalayan salt, black ground pepper, garlic powder, turmeric, all season no salt (Costco brand for me), chili powder, paprika
INSTRUCTIONS:
Cut chicken breasts into thin slices.
Add to a skillet and add a good hefty shake of your favorite seasonings/herbs, and a 1/4 cup or so of water. Cover and cook until mostly done, stirring occasionally. Add a little more water if it cooks up. This is what I call Water Frying.
Once chicken is mostly done, add peppers and onions, maybe more seasonings, and let it cook until the veggies are tender.
That is it! Easy peasy.
Serve with your favorite toppings such as guacamole, sour cream, salsa, grated white cheese (I prefer mozzarella for a few fewer calories), pico de gallo.
Can be eaten with organic beans, using riced cauliflower or quinoa as "rice",
Cassava Flour or Almond Flour tortillas or Cassava Flour chips. (I use Siete brand for all of these.)
