Veggie Fajitas

I was craving fajitas today and had everything in my fridge to make them, so I did.

What is "everything"? Check it out...


  • Onion, sliced in strips

  • Sweet Bell Pepper, sliced in strips

  • Baby Bella Mushrooms (or whatever your fave), sliced

  • Avocado Oil

  • Seasonings: Himalayan salt, black pepper, garlic powder, turmeric, cilantro, chili powder, paprika

*amounts depending on how much you need


  • Spray skillet with avocado oil and stir veggies and seasonings with a little water until tender.

  • Serve with my favorite easy grain-free tortillas, guacamole, sour cream (or plain yogurt) and salsa or what I used (chopped tomatoes, onions, cilantro and seasonings)
