Chocolate Brownies with a SWEET Surprise

I'm always experimenting with healthy options for some of our favorite treats.

I experimented several times before settling on this recipe. It was so yummy that people would be surprised to find out the ingredients. Don't tell them, and they won't know.


INGREDIENTS

  • 2/3 cup Monk fruit + Allulose (my favorite brand is here)

  • 1/4 tsp Himalayan Salt

  • 1 tsp Pure Vanilla

  • 1/2 cup Organic Cacao Powder

  • 1 cup Organic Peanut Butter (peanuts and sea salt only)

  • 1/3 cup Almond milk

  • 1 1/4 cup mashed sweet potato

  • 1/3 cup Dark Chocolate Chunks or chips, 72% Cacao

  • Chopped nuts optional for topping


INSTRUCTIONS

  • Clean and slice sweet potatoes. If using organic, no need to peel. Put in skillet with 1/4 - 1/2 cup water and cover. Let cook, stirring and flipping. This is what I refer to as "water fry." Once tender, take out and either mash with a fork or, if using organic and cooked with skins, put in a food processor or blender to mash.

  • Add all of the ingredients in a bowl and mix well.

  • Put in an 8x8 greased baking dish (or use nonstick spray such as avocado oil spray).

  • If topping with chopped nuts, sprinkle on top.

  • Bake at 350º for 20-25 minutes until the top starts to crackle. For moist, chewy brownies, check the inside with a toothpick for wet batter when it comes out.

  • Cool for a while before cutting.
