Single Serving Crustless Pumpkin Pie

I jumped on the bandwagon - finally.


For months I've seen all of the recipes using a certain ingredient as a base. Here's the problem...I'm not a fan of the ingredient - unless it's just the right brand which produces just the right texture. That ingredient is cottage cheese.


Even though I'm not a fan of cottage cheese, I am a huge fan of pumpkin pie. So as usual, I spent some time experimenting until I created just the right recipe for me. And here it is.


I will tell you honestly.

I cannot tell there's cottage cheese in it AT ALL. Seriously, no sign of flavor, texture, or anything that says cheese of any kind. My favorite brand was out at the store, so I chose something different. It's not one I would eat outside of making this pie, and it worked perfectly. The texture of the cottage cheese I purchased was "ick" (just being honest), but the texture of the "pie" is very similar to regular pumpkin pie as well as the flavor. I will make this multiple times this season. A little embarrassed to admit that I already have.


Two big differences - the ease and time it takes to make along with the calorie content.


I encourage you to try it - you really have nothing to lose. You will either love it or not, but it takes only about 5 minutes to make, 25 minutes to bake, and a couple of hours of patient waiting for it to chill. This recipe is for a single serving. Want more? Double, triple, or quadruple it. Each single serving is 86 calories based on the recipe with the cottage cheese I used.


INGREDIENTS:

  • 1/4 C pure pumpkin

  • 1/4 C cottage cheese - your favorite or not (can't taste it either way)

  • 1.5 T of egg whites

  • 1 tsp of Pumpkin Pie Spice

  • 2 T of Allulose and Monk fruit

  • 1 tsp pure vanilla


INSTRUCTIONS:

  • Preheat oven to 350º

  • Put all of the ingredients in a food processor or small blender. For this I use my Ninja Bullet.

  • Blend until smooth.

  • Pour into a greased or sprayed ramekin.

  • Bake for 25 minutes

  • Let cool, then put in fridge to chill for 1-2 hours (or longer)

  • I put 2T of Redi Whip with real cream on top (please avoid cool whip that has nothing real in it)
