No-Corn Bread Veggie Sandwich

If you saw the post for Open-Faced Meatless Mound of Goodness, you know I made some bread flats of my favorite grain-free No-Corn Bread recipe recently and we had that delicious experiment for dinner last night.


Today for lunch,

  • I took a flat and cut it in half,

  • put a little Avocado Mayonnaise on it,

  • some lettuce,

  • sliced onion,

  • sliced red bell pepper,

  • sliced tomato

and made a meal out of it.


It was so good - you must try it!
