Pizza Pizza Pizza

I've made many pizza crusts before, and up until now my favorite has been the Broccoli Crust Pizza. However, after a few years of hearing about Fathead pizza crust, I finally made one after a friend shared a recipe she'd tried from the book, 21-Day Ketogenic Diet Weight Loss Challenge.


It's basically the same recipe found all over the internet, but it was THE one that made me decide to try it.


Now I will say that it's definitely more calories than the broccoli crust one I've made before; however, THIS IS THE BEST and so much like a regular grain pizza crust that most people would have no idea that it's not!


It was so good that I made it over the weekend...and the next weekend...and the next week.


NOTE: You can make this as deep dish by putting it in a casserole dish or press it out on a pan to make a thin crust (or in between depending on your preference.)


This is the recipe that I used for the crust from the book. I've not tried, but it says you can even make ahead and freeze for later.


CRUST RECIPE:


INGREDIENTS

  • 1 1/2 cups (about 6 oz) of shredded Mozzarella Cheese

  • 2 T cream cheese

  • 3/4 cup almond flour

  • 1 egg

  • Seasonings of choice (I use garlic powder, Himalayan salt, black pepper, paprika, and basil)


INSTRUCTIONS

  • Heat the cheeses together in a microwave bowl for about 30-45 seconds or until melted, and stir.

  • In another bowl, mix together almond flour and seasonings.

  • Add the almond flour mixture to the melted cheeses and add the egg. Mix together with a spatula and then, using your hands, knead it until the dough comes together. Spread it on a greased (or nonstick spray such as avocado oil spray) dish until the thickness you desire.

  • Bake at 425º for 12-15 mins or until it appears lightly golden and done.

  • Remove from oven and let cool a few minutes before adding your toppings.


TOPPINGS

Use whatever toppings you desire. I used about 2 oz of mozzarella cheese, slices of onions, chopped sweet bell peppers, ground turkey or beef, and sliced green olives.



  • Bake for an additional 10-15 minutes until cheese starts to turn a little brown.


THIS IS SO GOOD! Trust me. And it can be sliced and eaten by hand like any other pizza.
